FalafelFor whatever reason, I’ve always thought of falafels because I always see it on menus in pizzarias and fastfood joints in Denmark. Places I do not associate with vegetarian food. It wasn’t until I was actually served falafel that I realized they were vegetarian and also that they make great snacks.


2 dl of dried chickpeas

1 big handful of fresh parsley

1/2 tsp of ground nutmeg

1/2 tsp of ground pepper

1 1/2 tsp of salt

1/2 tsp of dried chopped chilli

3 cloves of garlic

1/2 tsp of madras curry powder

1/2 tsp of turmeric

2 tbsp of lemon juice

2 tbsp of flour

  1. Soak the chickpeas overnight or for about 3 hours.
  2. Blend everything together except the flour.
  3. Mix in flour with a spoon. Shape into balls  and deepfry at medium-high heat until golden.

Yoghurt sauce

1/2 clove of garlic (crushed)

4 tbsp of natural yoghurt

1 tbsp of chopped chives

2 tsp of lemon juice

salt and pepper to taste

  1. To make the sauce, simply mix all the ingredients together.
