ChèChè is a Vietnamese dessert that comes in many varieties, some are more or less sweet soups, some a bit more like parfaits. What they all usually have in common though is coconut milk and sweet beans in some shape. So after I had some in a restaurant recently I asked my mom for advice and decided to give it a go.

My particular blend consisted of agar-agar jelly at the bottom, anko, split mung beans, a coconut and tapioca mix and topped with a chestnut.
